Wonderfully fresh and light, actually a real summer meal
Ingredients
Two bunches of soba noodles
1 avocado
Red chili pepper
Coriander
Lime
Peanuts
Oil
Preparation
Boil the soba noodles in salted water for 3 minutes, rinse with cold water
Dice the avocado
Cut the chili into thin slices to taste, whisk with a little lime zest, lime juice ans oil
Place the noodles and avocado in a bowl and carefully toss with the dressing
Top with fresh coriander and peanuts
