Wonderfully fresh and light, actually a real summer meal

Ingredients

Two bunches of soba noodles

1 avocado

Red chili pepper

Coriander

Lime

Peanuts

Oil

Preparation

  1. Boil the soba noodles in salted water for 3 minutes, rinse with cold water

  2. Dice the avocado

  3. Cut the chili into thin slices to taste, whisk with a little lime zest, lime juice ans oil

  4. Place the noodles and avocado in a bowl and carefully toss with the dressing

  5. Top with fresh coriander and peanuts
