Ingredients
6oz smoked tofu in small cubes
31/2c green asparagus, finely chopped
4 eggs
oil
salt
chili powder
Preparation
Salt the finely chopped asparagus
Heat a little oil in a pan and fry the smoked tofu until crispy
Add the asparagus and fry for 2-4 minutes. Reduce the heat and crack four eggs into the pan. Allow to set to the desired degree
Salt to taste and season with chili powder
